Demand for Dagestani cuisine increases by 90% in summer of 2025 in Russia

Yandex.Food reports a significant surge in demand for Dagestani cuisine during the summer of 2025, observing a 90% increase in orders across its platform. Moscow led this culinary trend with a 68% year-on-year growth. Other cities demonstrating notable increases include St. Petersburg, Rostov-on-Don, Kaspiysk, Ivanovo, Tyumen, Stavropol, Irkutsk and Nizhny Novgorod.

Makhachkala, the capital of Dagestan, experienced a tenfold increase in demand, likely attributable to the burgeoning tourism industry and expanding delivery services in the region.

Russians order not only popular dishes like chudu, khinkal and kurze but also opt for set meals. Rasul Parkuyev, founder of Dagestani Lavka, confirms this trend, stating that summer sales grew by 45%. He attributes this growth to customers' increasing interest in exploring complete Dagestani dining experiences.

Experts suggest several factors contributing to the cuisine's popularity: the accessibility and familiarity of dishes, the rising recognition of Dagestani products like urbech and spiced coffee and the influx of tourists discovering the region's culinary offerings.
